I have a problem with this saying, because for me it goes more like…Breakfast, eat like a King (Queen), Lunch, eat like a Prince (Princess) that’s just gone for a run and is starving from their King size breakfast, and Dinner, eat like a Peasant that’s starving and finally finds food. So…pretty much eating whatever I want and as much of it as I want tends to happen most often. Anyone else have this problem?
Anyway, lately my breakfasts, lunches and dinners have been royally worthy of writing about, thus this posting.
Breakfast this past weekend…
The potatoes were leftover from the evening before. Once roughly mashed and pan fried they became the base to this dish. Two over easy eggs, and leftover chimichurri sauce (also from the night before) decorate the top of the potatoes, along with some hot sauce served only by a restaurant down the street from us that we’re a little over the moon for. Yum!
A robust salad with all the fixings! Kale, lettuce and cabbage base with gold beets, tomatoes, grapes, almonds, avocado, pumpkin seeds, baked chicken breast and gouda cheese; mixed with a citrus vinaigrette. The only thing I’d change is perhaps adding more fruit, or perhaps dates to counteract the bitterness of the vinaigrette. But overall very yummy and very filling!
My co-worker often comes in to the office with multiple small Tupperware containers, that hold what is needed to create a gourmet sandwich of epic proportions. 😉
Today he asked me if I’d like to join him in his sandwich creation, as he had two of everything. I am a lover of sandwiches, and am hopefully not too bold in saying – I make a mean sandwich – so I was only too happy to join him.
The pictures above are our creations: his on the left and mine on the right. Once completed they were towers of turkey, tomato, cucumber, avocado, mayonnaise & Dijon (Dijonaisse), s&p, and sriracha to warm the taste buds. The bread he picked up from an Italian deli near his home, and once toasted were perfectly crunchy and soft in all the right areas.
The only thing missing was a beer and a handful of chips and a pickle. (That’s how I normally have my sandwiches)
This past weekend’s dinner…which began with an appetizer:
The wonderful and oh-so-talented BF made myself and a friend dinner on Saturday night that gave his abilities away. I may step out of the kitchen from now on and let him take over!
Above: shrimp cocktail with sliced avocado, homemade cocktail sauce and fresh parsley sprinkled over, served in a martini glass. Salty, tangy, spicy and cooling – this was wonderfully done and tasted amazing. A great appetizer for any event!
The dinner…family style!
We had steak, potatoes, and asparagus, with a homemade chimichurri sauce (a first in our house), and fresh parmesan grated over the whole dish. The meat was cooked to a perfect med-rare, asparagus still crunchy but not undercooked (with lemon and olive oil), and small multi-coloured potatoes steamed and then baked.
A very “meat and potatoes” kind of a meal but with great extras that took it from boring or common to mouth watering. 🙂
With dinner we had a nice bottle of Mission Hill Reserve Pinot Noir 2013.
